This bread makes delicious toast and can be made, start to finish in 3 hours. It's easy.

English Muffin Bread
Vici - makes 2 loaves
2 1/4 teaspoons active dry or instant yeast
1/2 cup lukewarm water
2 cups lukewarm milk
1 tablespoon sugar
2 1/2 teaspoons salt
1/4 teaspoon baking soda
5 1/2 cups all-purpose flour approximately
cornmeal



1. In a large bowl dissolve the yeast in 1/2 cup water.

2. Add the lukewarm milk. Stir in the sugar, salt and baking soda.

3. Add 5 cups of flour and stir until you have a mass of thick, sticky dough. Pour dough onto a clean, flat work surface that's been dusted with flour. Knead the dough, adding flour as necessary until you have a soft, resilient ball of dough that does not stick to your work surface, 5 to 10 minutes.

4. Place dough in large, oiled bowl or tupperware container, cover and let rise until dough has doubled in volume.

5. Grease 2 bread pans and dust generously with corn meal.

6. Divide and shape dough into 2 loaves and place in pans. Dust tops with cornmeal. Cover with a clean, dry towel and let rise until the dough forms a slight dome over the edge of the pan.

7. Bake in preheated 400° oven until golden brown; approximately 30 minutes. Remove bread from pans and cool on wire rack.
