Greek Lamb Burgers
variation on a "Cooking Light" recipe - serves 6

So, somewhere in the middle of her first bite, Jessica was inspired enough by this burger to plan a summer barbeque around it. This really is an awesome burger.
One great thing about having a food processor, is I did not have to commit to buying 1.25 pounds of expensive ground turkey. I bought turkey cutlets, ground what I needed and froze the remaining cutlets for some quick and simple dinner in my future...

1/2 cup crumbled feta cheese
1 tablespoon chopped fresh rosemary
1 teaspoon grated lemon zest
2 teaspoons dried oregano
1/2 teaspoon salt
3/4 pound lean ground lamb

3/4 pound ground turkey breast
three 6-inch pitas, cut in half
GARNISHES
Tzatziki Sauce
cucumber slices
chopped tomato
lettuce leaves

red onion, thinly sliced
additional crumbled feta
1 Combine all the ingredients, except pitas and garnishes (the feta through the turkey). Divide mixture into 6 equal portions, shaping each into a 1/2-inch-thick patty.

2 Cook on grill or on stove in a seasoned iron skillet. Let stand 5 minutes.


3 Place one patty in each pita half; drizzle with Tzatziki sauce, add in cucumber slices, tomato, lettuce, thinly sliced red onion or more feta cheese as desired.
