| Sweet Potato Hash with Bacon | |||||||

I am really loving sweet potatoes right now. The other day I mashed some because I didn't have any Yukon Golds. Sweet potatoes mashed are utterly delicious and beautiful, and require less butter than starchy white potatoes. These sweet orange beauties are also amazing as hash browns. Trust me, this is one of the best recipes on the web page. |

| 1/2 pound sliced bacon, cut into 1/4-inch strips 2 cups chopped onion (about 1 large) 1 large red bell pepper, cut into thin strips 2 pounds orange sweet potatoes (garnet yams), peeled and cut into 1/2-inch cubes 1 teaspoon chopped fresh thyme |

| 1 | Cook bacon in a large nonstick or cast iron skillet over medium heat until crisp. Transfer to paper towels, reserving fat in skillet. |

| 2 | Add onions and bell pepper to skillet. Season with salt and pepper and cook until softened. Stir in potatoes, add more salt and cook, covered, stirring occasionally, until potatoes are tender and browning around the edges, about 20 minutes. Stir in thyme, bacon and salt and pepper to taste. |
